Use of hyphens vs reformatting text

Hi all - I have to design menu cards for food items, in collaboration with an external agency who have developed the design guidelines for the products. Some of the items we have to design up are simple menu cards that are placed in front of the food items at a deli-style counter. The design agency proposed a typeface, font, colour scheme etc which needs to be adhered to across the range of menu items. My question is this: if they have stipulated a font size of 24pt on the card, which works very well for "eggs" or "ham", but then "horseradish" doesn't fit without hyphenation - what is it better to do? Lower font size until it fits and reduce legibility, or to hyphenate and split the word up? What is a more acceptable design practice?
