How do you keep your portfolio relevant with new work while unemployed?

I've been a stay at home mom for 18 months now and haven't had any design work since I quit right before having my son. I've been looking for a job now for about 6 months on and off and have only had one interview. Besides all the other things I will/can do to have me stand out, I feel like one thing I could do is add new projects to my portfolio that are "made up" since I can't seem to find any freelance stuff that's portfolio worthy. Any suggestions or advice on what to do, where to look for inspirations, etc?

We moved to Helsinki, Finland in November 2016 and since moving here, I've realized I probably either need to sway my work to UX/UI Design or become an engineer...
